A growing, personal list of cafés serving specialty coffee — places we have sat in, ordered from and would send a friend to. No rankings, no sponsorships: a short note on what each one does well, so you know what to order when you arrive.

    One of the places that set the tone for specialty coffee in the city. Feels like an old saloon: you go for the conversation as much as the cup, and both hold up.

    Exquisite filter, an unusually good selection

    A filter-first café with a selection that rewards curiosity. If you want to taste what a roaster is actually capable of on a given week, this is where to start in Amsterdam.

    Charming, milk drinks first — but ask for filter

    Best known for milk drinks, and they are very good at them. Ask for filter and they will make you a proper one; the people behind the bar clearly enjoy the question.
